Although it operates in a highly competitive environment, the cookbook is one of the most dynamic sectors of the French edition. The production has exploded over the last twenty years. The secret may be in the capacity of adaptation of particularly creative editors, who know how to apply all the recipes of the marketing : permanent Works on the Product to suit the trends, reissue of the classics of the fund, looks for new media authors, exploration of niches, segmentation of the readership, lower prices, diversification of distribution methods and close collaboration with the other media : press magazine, television, cinema and Web. Initially devolved to the transmission of a culinary know-how and to the domestic education, these works evolved over time and the border between practical and coffeetable book faded: the cookbook should seduce today so much by its esthetics that by the quality of its contents.
